There is hardly a better way to start of December than with homemade æbleskiver. And if you’re up for an unconventional twist, you can also try replacing the apple filling with a bit of nougat in the center - just before turning them in the pan.

Ingredients

3 eggs
4 tablespoons sugar
250 ml warm milk or buttermilk
15 g yeast
65 g butter
200 g flour
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1 teaspoon grated lemon zest
A bit of butter for frying
1 apple – cut into 20 small pieces

Accompaniments: Jam and powdered sugar

Instructions

  1. Separate the eggs into yolks and whites. Beat the egg yolks together with the sugar until the mixture becomes white and fluffy.
  2. Melt the butter in a saucepan and let it cool slightly.
  3. Dissolve the yeast in a bowl with the warm milk and add the beaten egg yolks. Add flour, cardamom, salt, lemon zest, and melted butter. Stir the dough until smooth.
  4. Beat the egg whites until stiff and gently fold them into the dough.
  5. Put a bit of butter in each hole of the æbleskive pan, fill with dough and a small piece of apple, and cook the æbleskiver for about 2 and a half minutes on each side. Turn them with a knitting needle. Total cooking time is 5-6 minutes.
  6. Serve the warm æbleskiver with good jam and powdered sugar.

Tip: Make a quick jam if you like: Put 300 g mixed berries and 75 g cane sugar in a saucepan and bring to a boil. Let it simmer until the sugar is dissolved. Blend half of the berries and mix them with the remaining whole berries. Optionally, season with a bit of grated orange zest and vanilla. If you need to thicken the jam, mix a bit of cornstarch with cold water and add it to the saucepan while stirring. Bring to a boil and stir until the desired consistency is reached.
