When looking at all six tested dates, they clearly fall into two camps. Two of them are large, dark, and smooth, while the other four are smaller, lighter, and wrinkled. So, when you’re at the supermarket, that’s essentially the choice you’re faced with.

Test judge, pastry chef, baker, and chocolatier Marianne Valentine describes the large, dark types as »juicy and marzipan-like«, while the lighter ones are more dried and thus also drier. Marianne Valentine has no doubt about which she prefers.
