Christmas baking with Trine Hahnemann: Timeless æbleskiver (Danish pancake balls)

Yields about 30 pieces

Ingredients

40 g yeast

800 ml lukewarm whole milk

600 g all-purpose flour

2½ tsp salt

1½ tsp ground cardamom

3 tbsp sugar

4 eggs, separated into yolks and whites

150 g butter

For serving:

powdered sugar for dusting

jam of your choice


Instructions:

  1. Dissolve the yeast in the milk in a large bowl. Sift the flour, salt, and cardamom into another bowl. Mix the dry ingredients together in a bowl.
  2. Whisk the egg yolks into the yeast mixture, add the dry ingredients, and whisk the batter together.
  3. Beat the egg whites until stiff in another bowl, and fold them into the batter. Let the batter rest for 40 minutes.
  4. Heat an æbleskive pan over medium heat. Put a little butter in each hole, and pour in the batter when the butter has melted.
  5. Place half a prune (if using) in each æbleskive, and cook them for 3 - 4 minutes or until golden on the bottom, then turn them over. Continue cooking for 4 - 5 minutes until golden, then remove them from the pan.
  6. Repeat the process with the remaining batter.
  7. Dust them with powdered sugar, and serve immediately with jam and warm mulled wine.
