Yields about 30 pieces
Ingredients
40 g yeast
800 ml lukewarm whole milk
600 g all-purpose flour
2½ tsp salt
1½ tsp ground cardamom
3 tbsp sugar
4 eggs, separated into yolks and whites
150 g butter
For serving:
powdered sugar for dusting
jam of your choice
Instructions:
- Dissolve the yeast in the milk in a large bowl. Sift the flour, salt, and cardamom into another bowl. Mix the dry ingredients together in a bowl.
- Whisk the egg yolks into the yeast mixture, add the dry ingredients, and whisk the batter together.
- Beat the egg whites until stiff in another bowl, and fold them into the batter. Let the batter rest for 40 minutes.
- Heat an æbleskive pan over medium heat. Put a little butter in each hole, and pour in the batter when the butter has melted.
- Place half a prune (if using) in each æbleskive, and cook them for 3 - 4 minutes or until golden on the bottom, then turn them over. Continue cooking for 4 - 5 minutes until golden, then remove them from the pan.
- Repeat the process with the remaining batter.
- Dust them with powdered sugar, and serve immediately with jam and warm mulled wine.
